With apologies to Rachael Ray. I just finished making some pumpkin butter from my jack-o-lantern, and boy, is it good. There are only four ingredients in it (pumpkin, brown sugar, whipping cream, and spices) and it’s really good on English muffins, toast, waffles, etc. If anybody wants the recipe, let me know. It’s kind of different than the ones I’ve seen on the internet.
Our women’s club has a Make It, Bake It, Grow It, Sew It auction every year and I made it for that. I just hope it sells well because I’ve made 16 1/2 pints. (Not 16 1/2 pints, they are 1/2 pints and I made 16 of them.) Also making pumpkin bread and pumpkin cookies.
That little sucker make a LOT of pumpkin puree…17 cups. That’s equivalent to more than 8 cans so I’m going to be making a lot of pumpkin stuff.

November 10, 2011 at 7:50 pm #28555BonbonParticipantMix 2 c. (or 1 can) pumpkin puree with 1 1/2 c. packed brown sugar and 1 1/2 tsp. pumpkin spice. Bring to a slow boil and boil for 10 min. Let cool.
Heat 2 c. whipping cream to a slow boil and boil until it’s reduced to 1 c. This takes a long time, 15 – 20 minutes and it goes fast at the end so watch carefully or it will burn on the bottom. Scrape the insides of 3" vanilla bean and mix in with cream. Let cool slightly.
Poor cream into pumpkin and stir well. Pour into sterilized jars. (I use little plastic containers because it doesn’t last long enough to actually "can.") Cover and keep refrigerated. Makes approx. 1 1/2 pints.
November 10, 2011 at 9:50 pm #2856253tdogsParticipantPumpkin and cinnamon, brown sugar and fall spices make the house smell wonderful! Here’s what I’ve been making for the fall with pumpkin stuff….pumking struesel cupcakes (in place of coffee cake for the season). Lot’s of good recipes here too!

I put all my recipes in the computer and printed them out for a three-ring binder. I had to convert all my mom’s old recipes where she had written things like, "add vanilla," (no amount) or "bake for 20 min" (no temperature) "stir in flour till mixed," (no amounts). There were a lot of them like that.
It also helped to get rid of all the recipes on scraps of newspapers, magazines, Post-it Notes, etc. that I had tucked in a box. It took me a long time but it was worth it. I have two, one just for desserts and the other one for everything else.
Of course I still have a ton of cook books. I don’t know why, I’ve never been a really good cook (although I LOVE to bake), but I’ve just collected them through the years. I’m not sure I’ve bought even one of them.
I got my very first one before I was married. Every time you bought gas they’d give you a cookbook of a different category and when you collected them all (25), you got a binder to put them all in. That went in my hope chest…very first thing. And thank God because I didn’t know how to cook a thing when we got married.
This is probably more than you wanted to know. :o)
November 11, 2011 at 1:14 pm #28581SWParticipantAs a kid I do remember getting more than just gas at the gas station (little things like always cleaning the windows, checking oil and getting free glasses, coupons for free things, etc. ) I can’t remember the last time I got any of those things at the gas station- it’s usually just pay an arm and a let for gas! lol Thanks Bonbon!
